If you haven't visited Ree Drummond's The Mercantile in downtown Pawhuska in awhile or ever (which, if not, that's a true bucket list moment), stop by and you're in for a treat! The Pioneer Woman recently shared a snapshot of what she calls The Merc's "scramble skillets"—and they're so cute.

"Our beautiful little scramble skillets at The Mercantile. ❤️," she said. "I love them. They're special! And cheesy. Our chefs are so incredible. 😭 Come try one soon!"

The tabletop photo features a trio of small double-handled cast iron skillets, and each one is loaded with scrambled eggs, roasted potatoes, and colorful garden-fresh veggies. It's the one-pan breakfast inspiration we'd only expect from Ree, and it's easy enough to recreate at home: Start with three scrambled eggs in a cast-iron skillet, then add your mix-ins!

Chef Tim Slavin at The Merc says there are four styles of their scramble skillets, including the Country, the Tuscan, the Southwest, and the Veggie Scramble. Here's a quick closer look at each:

Three eggs are scrambled with melted cheddar cheese and a meat lover's mix of brown sugar glazed ham, sausage patties, bacon—all diced. Minced chives are sprinkled on top for garnish!

The eggs are scrambled with spinach, sundried tomatoes (diced), and roasted red bell peppers (with the seeds and skin removed). Goat cheese is mixed into the scramble and melted on top, then fresh cut basil is sprinkled on for garnish.

Eggs are scrambled with roasted poblano or Anaheim chiles (with the seeds and skin removed), as well yellow, green, and red bell peppers (diced and roasted or sautéed), red onions (diced and roasted or sautéed). Then, two varieties of cheese are added! Monterey jack cheese is mixed in with the eggs and Cotija cheese is crumbled over the top for garnish. Extra garnishes include crispy tortilla strips, fresh cilantro leaves, and pico de gallo.

Last but not least, this one is for the veggie lovers! Eggs are scrambled with a mix of yellow, green, and red bell peppers (diced), red onions (also diced), zucchini (quartered, then cut into thin slices), and spinach. White cheddar cheese is mixed in with the eggs and feta is crumbled over the top for garnish.

The point is, you can top yours with anything you'd like: fresh sprouts, crumbled cheese, heck even tortilla strips! (Why not? It's your personal scramble.) Another Merc-inspired tip: Serve alongside some breakfast potatoes, a biscuit, and homemade jam.

It makes the perfect brunch! Just picture this alongside a short stack of Edna Mae's Sour Cream Pancakes and Cowboy Coffee (and yes, you can order those specialties on the menu at The Merc, too) and you can enjoy a well-rounded Pioneer Woman breakfast.
